Smoked Cod, Cucumber and Orange Salad
Ingredients:
- 1 navel orange
- ¼ cup balsamic vinegar
- ½ cup vegetable oil
- 2 teaspoons Dijon mustard
- ½ teaspoons salt
- ½ teaspoon freshly ground pepper
- 10 ounces smoked cod (or salmon), cut into small cubes (about 2 cups)
- 1 cucumber, peeled, seeded and diced (1-1/2 cups)
- ½ cup coarsely chopped fresh parsley leaves
- 6 cups mixed spring lettuce
Instructions:
- Grate the dark outer orange zest from the orange into a small bowl. Add the vinegar, oil, mustard, salt and pepper and whisk together.
- Cut the remaining rind from the orange, cut the orange into sections and discard the membrane.
- In a medium bowl, toss together the orange sections, cod, cucumber, parsley and half the dressing. Cover and chill the salad until ready to serve.
- Serve the salad on a bed of lettuce and drizzle with the remaining dressing.
