Summer and BBQ Recipes

Barbecued Country Ribs

Ingredients:

  • 2 lbs. country style pork ribs sauce
  • 1 tbsp. olive oil
  • 1 med. onion, chopped
  • 1 green pepper, chopped
  • 1/2 cup celery, chopped
  • 4 tbsp. lemon juice
  • 2 tbsp. brown sugar
  • 3 tbsp. worcestershire sauce
  • 1/2 tsp. cayenne pepper
  • 1 cup ketchup
  • 1 cup water
  • 1/2 tsp. dry mustard(mild or hot)
  • 1 tsp. celery salt
Instructions:

  1. Preheat oven to 425°F
  2. lay ribs in shallow 13x9 or larger pan, roast at 425°F for 30 min.

    In the meantime make sauce:

  3. Saute onion, pepper and celery in the oil till soft
  4. add all other ingredients
  5. simmer for around 20 minutes
  6. Pour sauce over ribs after the 30 min. roasting period
  7. Reduce oven to 325 and roast for 1-1/2 - 2 hours.
  8. Servce over hot buttered noodles.

    Chef's Comments
    To keep ribs from drying out while roasting - from time to time spoon sauce over the ribs while roasting.
