Summer and BBQ Recipes

Ingredients:

• 1/2 cup Italian dressing
• 4 portobella mushrooms, stemmed, tops cleaned
• 1/2 cup pesto sauce
• 4 kaiser rolls, sliced in half
• 1/2 cup bottled roasted red bell peppers, drained
• 4 slices provolone cheese

1. Combine mushrooms and Italian dressing in a bowl. Cover and marinate 2 hours.
2. Prepare grill or turn on broiler.
3. Season mushrooms with salt and pepper to taste.
4. Grill or broil mushrooms about 1-1/2 minutes per side.
5. Spread 1 Tbsp. pesto over cut side of rolls.
6. Top with mushrooms.
7. Top with a slice of cheese, roasted peppers and remaining half roll.
