Are you celebrating Memorial Day with a picnic or backyard get-together? Creating a menu of tasty holiday treats is easy—that is, until you realize your guests have different dietary needs. If your guestlist includes one or more vegetarians, you’ll need at least one meat-free option. Check out these easy veggie-filled picks that the whole family will enjoy making and eating!
This easy-to-make option is perfect picnic fare. Simply slice a few hoagie rolls or a baguette open and added roasted veggies. Slice eggplant, green or red peppers, beets or any other fresh vegetable. Grill the veggies until they have a slight char or place them on a skewer to cook. After stacking the sandwich, drizzle olive oil or a favorite dressing inside.
Mix one can of chickpeas, two tablespoons of tahini, four tablespoons of lemon juice and one glove of garlic in the food processor. Some people prefer a perfectly smooth texture. If you don’t, leave the hummus chunky. Add salt and pepper to taste. Cut pita bread in wedges and place the dip out for your vegetarian friends (and everyone else) to enjoy.
If you’re looking to ad a red, white and blue pick to your Memorial Day picnic table, try this fruit salad. Mix blueberries, raspberries, strawberry slices and watermelon (use a star-shaped cookie cutter to create cute patriotic pieces) and sliced banana in a large bowl. Serve the salad as is or use a hollowed-out watermelon half instead.
