Happy Cinco de Mayo! You’ve decided to throw a last minute party. The kids have helped with the decorations, but you still have a menu to plan. Yikes! Don’t stress. You can create a family-friendly buffet of treats. Instead of staying in the kitchen yourself, ask your kids to help you out. Younger children can measure and mix, while tweens and teens take on more central roles in the cooking process. Of course, always closely supervise your child in the kitchen. Quick Quesadilla

This easy dish is basically two tortillas sandwiching a cheesy, meaty filling. Okay, so you don’t have to add the meat if you want to keep things vegetarian. Ask the kids to pick out a few fillings, such as cheese, tomatoes, greens, peppers, avocados, chicken or ground beef. If you’re using chicken or meat cook the filling. Using ½ teaspoon of veggie oil, heat one tortilla in a frying pan over medium heat. Add the filling ingredients and continue to cook. Flip half the tortilla over, sandwiching it. Turn the heat down and cook until the quesadilla is warm and slightly browned.

Simple Salsa

Chips and salsa make an easy app that you can serve at your party. Chop fresh or canned tomatoes finely in a food processor. Add in finely chopped onions and cilantro. Squeeze lime juice on top to complete the simple salsa. You can also add other ingredients, such as black beans, chopped pineapple or small slices of mango.

Vegetable Tacos

This is super-simple – even for kids to make. Set out taco shells on your party table, and surround them with an array of ingredients. The guests can add whatever they want to their own taco creations. Offer seasoned rice, shredded cheese, cooked corn, black beans, cooked veggies (such as zucchini and onions), olives, jalapeno peppers and avocado.
