A fine instrument.
This knife is extremely sharp and holds its edge well. I'm kind of afraid of it--but so are the vegetables, which do not dare disobey me. Never before have I seen such meek obedience in green onions. They do as they are told. It is not difficult to cut them very finely and precisely. The relatively small amount of pressure necessary to cut prevents deformation, and deformation is what limits how finely something can be chopped or julienned. If you slice vegetables every day, you should do it with a good knife. This is a good knife.

Great knife...but
This really is a wonderful knife, but some of the attributes that make it that way (the high carbon steel and the very fine edge) means that you have to be aware you can't treat it like other knives. YouTube has many videos showing how to use it. While mine hasn't chipped, just knowing that it 'could' makes me nervous when I use it. I don't really want to be thinking about that when I prep for meals. That being said, I'll get back to how great this knife is....... The "D" handle, the light weight and the balance makes this feel perfect in your hand. I understand that Shun offers a lifetime 'free' sharpening, but because I bought mine as a 'piece' from a set (without paperwork) I wonder if I can get that. What's also unclear to me is the turn around time. If it gets sharpened in Japan that could be a while. I've always sharpened my own knifes and have purchased a 'special' tool to handle the angle of this knife, so it's really a non-issue for me. As for being a 'right handed' knife because of the handle design, the difference is small enough that it feels just fine in the left hand.Read full review

Awesome knife!!!
I bought my first 7” Shun Santoku back in 2004 and wore it down to nothing. This knife is exactly the same as the first one with a much better price tag. Sharp as hell! Great quality! Highly recommend!

Excellent knife
A great purchase- have used almost exclusively since I received it- the blade was a little thinner than I expected but has held up great- the knife holds an edge and my wife is afraid to use it because it is "too sharp". I would definitely recommend for the average home chef.
