I found this gorgeous antique copper mold in the Brittany Region of France, along with a similar piece that I sold a few weeks ago. While the interior of this pan appeared to have been recently relined with new tin, the exterior looked terrible when I found it. After cleaning and polishing this beautiful hand-hammered piece, I was thrilled to findthat it has a stunning copper glow and beautiful dovetail seams!

This piece is in excellent condition for its age & miles traveled. It is one of the most unique copper Charlotte molds that I have seen. It is slightly taller than most molds of similar diameter and, if you closely at the pictures, you will see that the pan has a very thick base. Pieces with this design are few and far between!

The Charlotte Russe has a long & interesting history.I have included tons of information about it at the end of the description.There are severalvarieties of this beautifully scrumptious dish.My personal favorite is aCharlotte aux Fraisesor Strawberry Charlotte- yummy!!Merci, ChefCarême!!


Exterior Condition:

The shimmering copper exterior of this piece has a sunning mirror-like shine and subtlyhammered finish that reflects the lightbeautifully!

Please keep in mind that this piece is very old. There are some cosmetic blemishes to be noted. Thereappears to be some silvery metal on the underside of the handles, most likely residual tin. There is also some patina around the handles and some minor nicks & scratches on the base and walls.

In my opinion, these minor imperfections give this old copper mold even more charm andpersonality!


Structural Condition:

This pan is structurally sound!

There are no leaks, cracks, holes or major issues to report.

The dovetail seams are watertight and completely intact.

The symmetry is fairly good, but not aperfectcircle-see pictures.

The solid copper \"tab\" handles are firmly attached by rivets.


Interior Condition:

The interior of the pan has been lined with hand-applied tin. Thelining is clean, bright and completely intact. There is no exposed copper.

There are some minor surface irregularities to be noted, including two \"weird blobs\" of tin-see pictures #12. In most cases, these little drips can be removed with a very sharp razor blade, then buffed with a soft Dremel tip. If you are planning to cook with this piece and would like me to smooth the blobs for you prior to shipping, I will be happy to do so. Remember, I am a drill-carrying dentist & I would like nothing more than to fix those spots... not with my dental handpiece of course ha ha! (I should have done this prior to listing the piece, but I didn\'t have time at thatmoment.)

While these small imperfections are no cause for alarm, they should be considered prior to offerding.

While the origin of its name is widely debated, most experts do agree that the creation of this delicious dish should be credited to 18th/19th Century French Chef ExtraordinaireMarie a fascinating, but short, life\'s story.I must share with you what I read on the \"FoodReference\" website.(Feel free to skip it, if this information is of no interest to you.)

Marie Antoine Carêmewas the founder and architect of French haute cuisine. His story is one out of a Dickens novel.

~He was one of at least 25 children born to an impoverished family who put him out on the street at the age of about 10 to make his own way in the world. Lucky for the world he knocked on the door of a restaurant for a job. He might have knocked on the door of a shoemaker!!

~By the age of 21 he was chef de cuisine to Talleyrand. He also served as head chef to the future George IV of England, Emperor Alexander I of Russia, and Baron James de Rothschild. He wrote several voluminous works on cookery, which included hundreds of recipes, menus, history of French cookery, instructions for organizing kitchens, and of course, instructions for monumental architectural constructions of food forpieces montees.. He died at the age of 48, and is remembered as the“chef of kings and the king of chefs.”
