Go Green with Earth Day Recipes
Go green for Earth Day with a few fun family recipes! That’s right, it’s time to go green — literally. Even though you aren’t exactly recycling your food, these kid-friendly ideas all come with a green theme. Then again, if you have leftovers in the fridge maybe you can reuse what you already have and make it into something new!
Remember that green salad you made for dinner last night? Well, your family didn’t finish it and it’s currently doing absolutely nothing in the fridge. What better way to go green than by reusing a green salad? Toast crunchy multigrain bread, top it with the greens (from the salad) and add your family’s favorite chicken or tuna salad recipe on top.
Keep the green theme going and toss the cucumbers from last night’s salad with two tablespoons of plain yogurt, two tablespoons of lemon juice and chopped dill. Add a sprinkle of salt, a pinch of pepper, and you’ve got a delicious new meal.
Treat your family to their pick of veggies — buffet style. Go with the green Earth Day theme and only serve green items. Include asparagus, cooked kale, green beans, sweet peas, edamame, brussels sprouts and broccoli. Add noodles, tofu or another main pick to go with the vegetable choices.
