Vegetarian Menu Picks for Your Memorial Day Picnic

Vegetarian Hoagie
This easy-to-make option is perfect picnic fare. Simply slice a few hoagie rolls or a baguette open and added roasted veggies. Slice eggplant, green or red peppers, beets or any other fresh vegetable. Grill the veggies until they have a slight char or place them on a skewer to cook. After stacking the sandwich, drizzle olive oil or a favorite dressing inside.
Hummus Dip
Mix one can of chickpeas, two tablespoons of tahini, four tablespoons of lemon juice and one glove of garlic in the food processor. Some people prefer a perfectly smooth texture.
